I'm struggling with my application, tossing alot of ideas around. The stats I rolled up make it hard for me to build a character around.

@Hal one suggestion is druid with a race that get +wis, since you had one decent ability roll you could amp up Wis. Once Druids get wild shape, low physical stats don't matter as much. You get Wild Shape at level 2.
That said, others look like they rolled similar to you, and anyway the DM ad seems to imply a strong emphasis on roleplay. So maybe optimal stats isn't a prime consideration?

Thank you, Yoshimi. That helps more than you know. I like my roleplay but I like to play a character convincingly lined up with their stats. It's all just pieces of a puzzle that I put together.

If it helps, I'll pick up interesting and flawed (mechanically) characters way before nicely optimized ones. They make for more interesting stories IMHO. - Savy

My rolls were similar, all 10-12 except one which I built around. As long as you have one, it will work, though low Constitution isn't good for a fighter. And, of course, I picked a background which fits the lack of great stats.

You may use the Strixhaven backgrounds as part of your College declaration with the understanding that your character has only 'heard' of Strixhaven - not been there. There may be some very real and important differences between what they have 'heard' or been told about the University and the experience they will have. I hope that helps! - Savy

I have a character concept in mind now, but I was wondering - are the Plane Shift supplements okay with you? Given the setting, I thought a character born out of one of them would fit nicely.
