I'm intrigued, though I'll have to think a bit about potential character concepts. As a point of clarification, is a "Mandalorian Character" one who has been raised in the culture from childhood? Can adults join the clan, and would they be "Non-Mandalorian Characters" since they weren't raised in its ways if so?

The clan is open to adopting outsiders as long as they follow the rules and adopt the culture. Your character could have joined the clan in adulthood and is perhaps just starting the select Mandalorian training (perhaps you would choose to spend very little of your starting XP in the Mandalorian specialization that you choose to represent this, but that is up to you). Basically, if your character chooses to wear the armor and follow the traditions they can be considered Mandalorian. If they want to stay separate from that you can apply with a non-Mandalorian character, just let me know why they're with the clan.

Is this using the SAGA edition rules or another? If another is there a link to an SRD or such. I love Star Wars and would like to apply, but need to figure out the rules first. Especially character creation.

It's the Fantasy Flight Games version (I'll edit the ad to make that clear). You should be able to find everything you need to get started here, but I'm happy to answer any questions you might have.
Edit to add; remember that you don't have to create a full character sheet to apply for the game, so just browsing the various species, careers and specialisations to figure out what fits your character concept best should be enough for now.

Are Mandalorians by definition Human? I can work with that, but I'm just curious. Oh, and are Mandies also bounty hunters by definition?
At the moment, I'm thinking of applying. I prefer playing pilots or explorers. But we'll see where inspiration takes me. No, any species could be Mandalorian but humans are by far the most common. Other species could either have been adopted into the clan, or maybe they are a descendant of someone who was adopted in the past. As long as they follow the code nobody will complain.
It might be hard to find character art for non-human mandos, but a description will suffice anyway.

Oh, that's right. The armor. They can't take off their armor because they're weird and enjoy smelling badly. Uh... what about Droid characters?

These guys can take their armor off when they want to, the people who can’t do that belong to a particular extremist sect. They just have to have armor, train to fight, and follow a code.
Droid characters are fine. Like I said in the FAQ I’m happy to accept up to one non-mando character to tag along, just let me know why they want to do that if they’re not a true believer.
